Add lamb pieces to coat with spice mixture—heat olive oil in a heavy large pot over medium heat. Don't overcrowd lamb pieces by working in batches and sauté on all sides until browned.  Return all lamb with its juices back into the pot. Add onion, garlic, ginger to the pan and sauté for another 5 minutes. Add 1 1/3 cups of water and bring to boil. Reduce heat and cover and simmer until lamb is almost tender, then add yams. Sir occasionally about 1 hour 30 Minutes At this time, grate peel from blood oranges and reserved in a small bowl. Cut remaining skin, including the white pith and coarsest chop oranges.   Add to the pot and continue to simmer until lamb is very tender, about another 20 mins.   Now it's time to serve with chopped parsley and honey on top. a spoonful of harissa if you desire with a side of lemon spinach quinoa or a traditional couscous.</image:caption>

Cubed and threaded between chicken cubes. Preparation In an airtight container, combine the kefir, half of the oil, lemon juice, spices, and half the salt. Submerge the chicken, close the lid, and refrigerate for at least two hours. When ready,  mix everything well and thread the chicken cubes onto the skewers. Heat 1/2 of the oil in a heavy-bottom pan over medium-high heat. Cook the chicken skewers for about three to four minutes per side or prepare your outdoor grill to cook skewers. In the meantime, prepare your homemade HUMMUS. Once the chicken is cooked, divide the skewers and salad onto plates. Sprinkle the remaining dill on top.</image:caption>

Wash thoroughly the skin and prick a few holes with a fork.  Roast yams until tender about 45 minutes depending on your oven temperature. Meanwhile, in a small bowl, whisk butter, tahini, lime juice, coconut, sesame oil, and ginger until smooth. Keep stirring! It may seem as if the ingredients aren’t combining but don’t give up. Taste, and adjust seasoning with salt, pepper with more lime juice as needed. When the sweet potatoes are tender, use tongs to transfer them to a large plate or platter. When they are just cool enough to handle, split potatoes in half lengthwise, and season with flaky salt. Spread tahini butter generously onto the flesh, and top with sesame seeds. Serve immediately with lime wedges.</image:caption>

      <image:title>SEASONAL RECIPES - Graffiti Cauliflower - Ingredients Fresh Tomato Salsa 1/3 cup pine nuts (optional) ¼ cup extra virgin olive oil Two tablespoons of capers One chili finely chopped with seeds removed One large heirloom tomato 1 tablespoon of Apple cider vinegar 1 tablespoon of lemon zest Sea salt Four large basil leaves ½ cup chopped parsley One medium head of cauliflower Sea salt to taste Cauliflower Prep   Set oven temperature to 400 degrees.  While oven is preheating, remove the outer leaves and trim the stem end from cauliflower.  Hold cauliflower with its base on a cutting board. With a sharp knife, make one cut through the center of the cauliflower to divide it in half.  Now cut each half into two 1 1/2-inch thick slices. The stem is necessary to hold the florets together. Save the ends to eat as a snack. Place “steaks” on roasting pan and drizzle with olive oil and season with salt.  Roast “steaks” until stem is fork –tender and golden brown.  Depending on your oven temperature about 10 to 15 minutes. Drizzle some olive oil in a serving bowl with a sprinkle of turmeric, place steaks on top, and spoon salsa over them with salt and a squeeze of lemon. Preparations Heat a cast iron skillet, add pine nuts, tossing a few times carefully not to burn them, until golden brown about 5 mins. Let cool in a mixing bowl, then add capers, and the rest of the ingredients gently tossing the chopped tomato to combine flavors.  Set aside.</image:title>

When partnering with a client with blood sugar imbalances, we identify and remove the “stressors” until the balance is restored: a food journal is an essential tool not to judge but to guide clients towards eating whole fruit instead of juices. Next, we swap complex carbs to replace sweets like soda, candy, and cookies. Finally, I challenge them to ditch the alcohol and caffeine that can worsen dysregulation in blood sugar and stress. Removing the “stressors” first yields food therapies that help regulate blood sugar. 2. The second strategy is starting your day with protein one hour after waking, amino acids are provided, and when enjoyed with complex carbohydrates, it’s training the body to slow down the release of glucose into the system. As a result, the client experiences sustained energy levels and now reduces the need to eat frequently – the first significant action in your day by leveling out the spikes and dips in a roller coaster of blood sugar imbalances. 3. The third strategy – I encourage clients to focus on eating plenty of fiber such as legumes, beans, vegetables, flax seeds and challenge them to increase their intake from a daily American average of 15 grams to 35 grams of fiber every day. Fiber is a crucial component in regulating blood sugar, and it will keep you full longer and help you crave less sugar. Look for my blood post on how to eat 35 grams of fiber daily on my website. 4. We replace sugar cravings by increasing essential fatty acids such as full-fat fermented foods like yogurt, cold-water fish, nuts, seeds, and hemp seeds. Healthy fats satiate us allowing us to eat less frequent meals – letting our blood sugar levels maintain balance.</image:caption>

      <image:title>WELLNESS ARTICLES - The Value of Broth and Stocks - Think of meat stocks as Grandma’s old remedy of chicken soup when you weren’t feeling well. “Meat” stock is made from meat that has some bones. Meat stock, rather than bone broth, is used in the beginning stages of the GAPS protocol to heal the gut. The simmer is for a relatively short time. 3 to 12 hours. There are some advantages to meat stock in time-saving meal prep for home cooks: Meat stock gives you meat to use for salads, tacos, etc., while providing you with a gelatinous broth to drink. It also gives you bones to make bone broth in the future. Nice! Is just that – a broth that is made with bony bones like marrow and knuckle; with a combination of meaty bones such as chuck ribs or neck bones. Bony bones yield gelatin and minerals, while the meaty bones ensure a rich color and a tasty umami flavor. Bone broth is cooked for a very long time, 12 to 24 hours, and sometimes up to 72 hours! This longer cooking time is advantageous for its superior mineral extraction while retaining the same excellent benefits from amino acids found in meat stock. Bone broth, for the GAPS diet, is only introduced after the gut is healed and sealed. Some individuals with longstanding gut issues find that consuming bone broth too early before sealing the gut leads to reactions (ex., migraines) to the concentration of free glutamates or histamine allergies that result from the longer cooked gelatin. Transitioning from “meat stock” to ‘bone broth” is an essential step towards awareness in your healing.</image:title>

A dollar per two eggs may seem expensive, but that is relatively good compared to other animal protein sources, and eggs are a nutritional powerhouse. Compared to non-pastured eggs, pastured eggs are higher in omega-3s and fat-soluble vitamins. Eggs contain exceptionally high levels of choline, an essential nutrient with various health benefits. Choline supports muscle performance during exercise, and it can improve stamina. Choline supports communication with muscle fibers and promotes muscle recovery following repetitive motion, improving overall training output. For athletes and other physically active individuals, choline promotes and regulates proper metabolism for increased energy and endurance. Choline aids in maintaining the nervous system, which also delays the onset of fatigue during strenuous activity. They’re also good sources of B vitamins, highly-bioavailable vitamin A, and selenium. Nutrients are concentrated in the yolk, so don’t expect to be able to throw away the yolk (maybe because you fear it will raise your cholesterol) and still obtain all those benefits. Perhaps the most appealing feature of eggs is their versatility. Eggs can be hard-boiled and then stored as a protein-rich snack.
