Golden Squash Fritters

Ingredients (Serves 2–3):

  • 1 medium zucchini or yellow squash (or mix with a little acorn/butternut), grated

  • 1 small carrot, grated (optional for color & sweetness)

  • 1 small shallot or 2 green onions, finely chopped

  • 1 egg

  • 3–4 tbsp almond flour or oat flour

  • 1 tsp cumin

  • ½ tsp coriander

  • Pinch of turmeric (optional)

  • Salt & pepper to taste

  • Olive oil or coconut oil for frying

Method:

  1. Prep the Squash: Grate squash and carrot, then squeeze out excess moisture using a clean towel or cheesecloth.

  2. Mix: In a bowl, combine squash, carrot, shallot, egg, flour, spices, salt, and pepper. Mix until a sticky batter forms.

  3. Form Fritters: Scoop 2–3 tbsp of mixture and shape into small patties.
