Golden Squash Fritters

Ingredients (Serves 2–3):
1 medium zucchini or yellow squash (or mix with a little acorn/butternut), grated
1 small carrot, grated (optional for color & sweetness)
1 small shallot or 2 green onions, finely chopped
1 egg
3–4 tbsp almond flour or oat flour
1 tsp cumin
½ tsp coriander
Pinch of turmeric (optional)
Salt & pepper to taste
Olive oil or coconut oil for frying
Method:
Prep the Squash: Grate squash and carrot, then squeeze out excess moisture using a clean towel or cheesecloth.
Mix: In a bowl, combine squash, carrot, shallot, egg, flour, spices, salt, and pepper. Mix until a sticky batter forms.
Form Fritters: Scoop 2–3 tbsp of mixture and shape into small patties.
Cook: Heat a skillet over medium heat with a thin layer of oil. Fry fritters 3–4 mins per side until golden brown and cooked through.
