Ingredients (Serves 2):
1 medium acorn squash, halved and seeds removed
1 tbsp olive oil or ghee
2 cups kale, chopped
2 large eggs
Pickled Red Onion:
½ red onion, thinly sliced
2 tbsp apple cider vinegar
½ tsp cumin
½ tsp coriander
¼ tsp turmeric

Method
Method:
1. Pre-Bake the Squash:
Preheat oven to 400°F.
Slice acorn squash into 1-inch rounds, brush with olive oil, season lightly with salt.
Roast on a baking sheet for 20–25 mins until just tender.
2. Make the Pickled Onion:
Combine sliced onion, apple cider vinegar, cumin, coriander, turmeric, and salt in a small bowl.
Let it sit for at least 10 minutes while preparing the skillet.
3. Cook the Skillet Breakfast:
Heat 1 tsp olive oil in a large skillet over medium heat.
Place pre-baked squash rounds in the skillet.
Carefully crack one egg into the center of each squash round.
Arrange chopped kale around the squash.
Sprinkle with salt and pepper.
Add 2–3 tbsp water, cover the skillet, and cook 5–7 mins until eggs are set to your liking and kale is wilted.
4. Assemble & Serve:
Transfer squash rounds with eggs and kale to plates.
Top with pickled red onions for a tangy, flavorful finish.
